All proceeds from the event will benefit Sierra Nevada Alliance and Squaw Valley Institute, both are non-profit 501c3 local organizations in North Lake Tahoe.  The Squaw Valley Institute is a nonprofit organization dedicated to connecting the community through inspirational programming celebrating the arts, wellness, education and adventure. The goal is to enrich our mountain culture and inspire uncommon conversations to effect innovative and authentic change for a stronger future.  Since 1993, the Sierra Nevada Alliance has been protecting and restoring Sierra lands, water, wildlife, and communities. Darren Weston– Executive Chef Thunderbird Lodge. Darren Began his culinary career attending The French Culinary Institute in San Jose, before moving to New York City to pursue his passion.  He spent 7 years working on the east coast where he honed his skills in the demanding New York City restaurant scene. Weston spent five years cooking at Lupa restaurant, before helping launch Manhattan’s Marta restaurant. Before returning to Lake Tahoe, Darren founded Blooming Hill Farm Events on an organic farm in the Hudson Valley.  He is now the executive chef at Thunderbird Lodge.  Chef Weston oversees Thunderbird’s culinary program including educational classes for adults and children; community cooking demonstrations; pop-up fundraising dinners; food, wine, and craft beers at Thunderbird events; Thunderbird’s organic herb garden; and an extraordinary mixture of menus for the public and Thunderbird members alike.

Ben “Wyatt” Dufresne- Former Corporate Executive Chef, PlumpJack Cafe. Ben began his career in the culinary arts as a teenager working at a fish market in his hometown of Scotia, New York. Discovering his fascination in the natural sciences, he graduated from Bates College in Maine with a double degree in biology and environmental studies. Admittedly following his love of skiing through each of these states, Dufresne found his niche when he moved to Lake Tahoe in 2002 and began his culinary career at PlumpJack Cafe. Dufresne worked his way up the PlumpJack chain of command in Squaw Valley from Pantry Cook to Executive Chef where he remained for 5 years.  When he moved to Sacramento with his wife, PlumpJack asked him to take over the culinary direction for the entire company as Corporate Executive Chef overseeing 9 different locations. Recently he decided that traveling away from home was not for him and is currently working on starting a Private Chef business in Sacramento. Dufresne’s cuisine draws off his love for sustainable, organic, and seasonal ingredients as well as his educational background in science. His knowledge of how things grow, the anatomy of animals and fish, and the environmental impact of sourcing sustainable products has great influence on his menu selections.

Glenn Simpson-Owner Tallac Catering Co. and Culinary Instructor LTCC. New Zealand born, Glenn brings a passion for craftsmanship to his approach to food. Often seeking flavor profiles from scratch sources such as fermentations, picklings and cured items, his simplistic approach to cuisine allows the natural properties of ingredients to shine. Versed well in plant based foods, he pulls from modern vegan techniques to create dishes that challenge the mind and palate.
